National Historic Cheesemaking Center: Hartwig Factory

The Skinner Creek Cheese Company, aka Hartwig Factory, was located in Jordan Township in Green County, just north of Wisconsin 81 on Skinner Hollow Road. Managed by John Kundert in the early 1900s, the factory produced Swiss and brick cheeses during a time when there were only seven cheeses produced in the state of Wisconsin: American, brick, Limburger, Swiss, cottage, cream cheese and cooked cheese. Today Wisconsin produces more than 300 varieties of cheese. Other cheesemakers at Skinner Creek were Joseph Buerble, Fred Rufenacht, George Altman and Rudy Grogg.
