“This is a quick on-the-spot dinner for my family that satisfies everyone’s taste buds. With four kids who all share differing opinions of my cooking skills, this recipe makes it simple for them to add their own ingredients like cheese, diced tomatoes or hot sauce. The spinach is peace of mind for me to know the kids had veggies. Enjoy!”


Ingredients 

1 lb. ground turkey

1 lb. pasta (Your choice. I typically use shell or elbow. The picture features spaghetti.)

1 package taco seasoning

1 cup spinach (frozen, optional)

1 cup oatmeal (I use whole grain quick oats)

Additional (optional) fixings: Cheese, diced tomatoes, hot sauce


Directions

  1. Cook Pasta: Boil water. Pour pasta in boiling water. Turn down heat to medium. Cook pasta for 10 minutes, or until pasta is cooked. Once pasta is cooked, drain water out in strainer, set aside. 

  2. In a separate pot, cook ground turkey. Turn stove to medium setting. To turkey, add: 1 cup of spinach (optional), 1 package of taco seasoning (follow directions on package to add water) and 1 cup of oatmeal. Mix together. Heat for 10 minutes, stirring occasionally. 

  3. Add any additional toppings like cheese, diced tomatoes, or hot sauce to your liking. 

  4. Combine pasta and meat together before serving.
