MADISON - Green County cheeses are among a variety of Wisconsin cheeses that are spotlighted in an upcoming episode of the tourism TV show, Discover Wisconsin. "Wisconsin's Cheese Heritage" airs at 6:30 p.m. Saturday on WKOW TV 27 (ABC).
Hosts Mariah Haberman and Eric Paulsen visit separate locations to learn about Wisconsin's cheesemaking heritage and the role ethnicity plays in our food culture by taking a closer look at how the Swiss, Italian, Hispanic and Germans have influenced Wisconsin.
Haberman visits with Chef Roland Fürst at New Glarus Hotel, where she learns about a few popular Swiss dishes such as Roesti, Kaesechuechli and Raclette. The New Glarus Hotel gets most of its cheese from Emmi Roth USA, Monroe, which is another stop on Discover Wisconsin's itinerary. Vice President of Operations Rene Weber gives a tour of Emmi Roth USA and explains the heavy Swiss influence on the company.
Haberman learns about Hispanic cheesemaking from Dave Webster, president of W&W Dairy.
Chalet Cheese and Baumgartner's are also visited. Paulsen meets with Myron Olson, Wisconsin Master Cheesemaker at Chalet Cheese, the only plant left in the U.S. making Limburger cheese.
