National Historic Cheesemaking Center: Moritz Cheese Factory

The Moritz Cheese Factory was located west of County Road N, at the intersection of Highpoint Road and Church Road in Monroe Township. Accompanying this photograph was a monthly statement of receipts and expenses for July 1935 for the John Moritz Cheese Co. A total of 844 pounds of milk was delivered to the factory at .885 cents per 100 pounds, which contrasts with today's approximate price of $16.25 per 100 pounds. A total of 7,884 pounds of cheese was sold at .101â"2 cents and .12 cents per pound versus today's approximate price of $1.60 per pound. Cheesemaker's monthly wage of $80.62 was figured at 8.5 percent of the total receipts. Ivan Marty was listed as one of the patrons delivering about 20 percent of the total milk delivered.
