National Historic Cheesemaking Center: Hicks Cheese Factory

The Hicks Cheese Factory was located in Lafayette County, south of Darlington at the intersection of Wisconsin 11 and 23, more commonly known to locals as "Hicks Corners." From the 1920s, the factory has been operated by four generations of the Roelli family. The factory closed in 1991 and was re-opened in 2006 by Master Cheesemaker Chris Roelli, operating as Roelli Cheese Haus Factory and Cheese Store. Roelli supports the National Historic Cheesemaking Center with a sustaining membership, which allows the center to continue welcoming visitors from all over the world.
