Making cheese, the old-fashioned way

MONROE - The National Historic Cheesemaking Center will host a cheesemaking event which will feature a horse-drawn milk wagon on Saturday, June 9. The center is located at 2108 6th Ave.

There will be a demonstration of how Swiss cheese was made more than a century ago. Master cheesemakers, joined by retired cheesemakers, will make a 90-pound wheel of Swiss beginning around 9 a.m., when the milk is delivered. The demonstration takes place in the nearly 100-year-old Imobersteg Cheese Factory, which was moved to the National Historic Cheesemaking Center's grounds and restored.

An early 1900s horse-drawn milk wagon will be on display during the event. Dave and Glenda Buholzer donated the wagon to the center. Volunteers worked throughout the winter to restore the milk wagon to its original condition, using the expertise of Ben Yoder of the Amish Spring Valley Buggy Shop, Brodhead, and Iron and Wood, the Postville blacksmith.

Other attractions include free admission to view the artifacts and data in the center's museum that chronicle the history of cheesemaking; a model farm display; antique milk truck; and tours of a caboose. There is also a Milk House Gift Shop and a Welcome Center that provides information about local businesses and attractions throughout Green County and surrounding communities in both Illinois and Wisconsin. A concession stand will feature cream puffs and Master Grilled Cheese Sandwiches.
