The Wyss cheese factory was located north of Monroe on County N and was established as a co-op in 1885. In 1939, Kraft Foods, working with cheesemaker Ernest Seeholzer, was instrumental in developing Limburger cheese made from pasteurized milk. This ensured the production of a more uniform product throughout the year. (Photo supplied by the National Historic Cheesemaking Center)
