Chef to present workshops on cooking techniques

BLANCHARDVILLE - Food stylist and chef Steff Culberson of Goose Chaser Farm, is offering series of workshops this spring. She focuses on cooking from scratch using local foods. The cooking classes will be taught at her farm kitchen and the basic "Cooking Techniques" at River Valley Trading Co. in Blanchardville.

n 10 a.m. to 1 p.m. Saturday, Feb. 20 - Onions and Company, from sidekick to Star.

n 5:30 to 7:30 p.m. Wednesday, Feb. 24 - Cooking Techniques Part 1 - Dicing, chopping, julienne, matchstick.

n 5:30 to 7:30 p.m. Wednesday, March 3 - Cooking Techniques Part 2 -Deboning a chicken, how to cut your own chops, cube and butterfly.

n 10 a.m. to 1 p.m. Saturday, March 13 - Spring Clean Your Cooking, lighten up your menu after the winter of comfort foods.

The Goose Chaser Farm is located in rural Blanchardville, in Green County. Culberson received her culinary training in Germany. In addition to food-styling, cooking demonstrations and workshops, she raises pastured heritage pigs and poultry.
