This photograph shows 1930s Lakeshire-Marty Company cheesemaker Christ Koenig using a special tool known as a Trier to remove a sample from a wheel of Swiss Cheese. The appearance of the sample will reveal if the cheese was successfully made, indicated by eye formation, flavor and body, (elasticity) of the cheese.
