The Bischofberger Cheese Factory (circa early 1900s) was named after the cheese maker, Adolph Bischofberger and was located at the corner of Meadow Valley Road and Disch Road in the Town of New Glarus. This factory was on the same farm as Green County’s first Limburger factory, which was in a log building on the Albert Babler farm. Adolph is pictured in front of the horse and wagon and was married to Maria Magdalena Hefty. Those seated in the wagon are presumed Adolph’s wife and Sister Rosina Hefty. The Hefty sisters were the granddaughters of Albert Babler (first limburger factory). National Historic Cheesemaking Center is most grateful to Bob Elmer — Sun Prairie WI, who shared this piece of cheesemaking history. - Photo supplied by the National Historic Cheesemaking Center.
