Built in 1869, this was the first cheese factory in the New Glarus area to make what Americans call Swiss Cheese.
In Switzerland, this type of cheese is called Emmenthaler. This cheese factory was located on the Freitag farm on Wisconsin 69 between New Glarus and Monticello. The first cheese factory in Green County was built in 1868 and made Limburger cheese.

The New Glarus Historical Society Inc. was founded in 1938 to not only preserve the unique history of New Glarus but to share it through the Swiss Historical Village & Museum that it owns and operates.
