An era that was, that will never be again: National Historic Cheesemaking Center
The Speich Cheese Factory located in Sylvester Township operated from the late 1800s into the 1900s. Among those cheesemakers were John Hiltbrand, Jacob Speich Sr., Carl Pfister, Christ Stettler, Henry Bexel, Sebastian Laeser Jr., Hans Leuenberger, A. Emil Buholzer, and John Nussbaum. The factory was predominantly a Swiss cheese factory. This factory, pictured in the soon to be released "Cheese Country" book, is just one of 200 photographs telling the story of cheesemaking in Green County.
